French dressing recipe:
That is our tranditional dressing in France, our vinaigrette.
Ingredients: 1 tbsp (tablespoon) French shallots (finely chopped), 1 tbsp red wine vinegar, 1 tbsp Dijon Mustard, 3 tbsp of olive oil, salt and pepper
Instructions:
Place the vinegar in a bowl, add salt and pepper, add the mustard and stir. Then, gradually pour the oil while strirring. Finally, add the French schallots.
Note: French schallots are not compulsory, and some add garlic instead. However, with garlic the dressing will bad after two days, whereas with schallots it will keep well up for 2 weeks. That may be important to keep into account.
Green goddess dressing recipe:
This is a totally different kind of dressing that I really have to try. It should be creamy, bright and fresh. What greens or vegetables would you combine it with?
Ingredients: 1 cup Greek yogurt, fresh herbs (fresh dill, parsley, basil or whatever herb you have available at that moment), 1 tbsp extra virgin olive oil, 2 tbsp lemon juice, 1 garlic clove chopped, 1/4 scallions, salt and pepper.
Instructions: blend all the ingredients together by hand or with a blender. If you do it by hand make sure you chop the herbs very finely so you get a homogeneous dressing.
